First, the potatoes are being carefully rinsed and cleaned by hand. We are using an advanced machine that allows us to peel larger quantities of potatoes. Afterwards, each potato is manually checked for dark spots or pits. Some potatoes might still have a little bit of skin here and there. We purposely leave it there because it does well for the overall taste.
We then rinse them in water to remove excess starch and keep them in water to avoid any color changes. This process also makes sure that our frites will be fluffy on the inside and crispy on the outside.
