The cleaned and peeled potatoes are then being hand cut using our special fry cutter that is displayed on our counter. The cutter ensures that every fry is consistent in size and shape. We preferred to make this process part of the experience. Through a glass window you can see the freshly cut frites finding its way to a bucket underneath.
We allow the freshly cut frites to drain and dry using a colander, which is important because any remaining liquids can influence temperatures during frying and therefore the quality of our frites.
