We searched for the best potato breeds suitable for frites. There are hundreds of different breeds, but not all potatoes are suitable for making frites. You generally want to have more dry / floury potatoes that are high in starch. This ensures the frites will absorb the oils to a lower extent, so they won’t get that greasy look and taste. You also want the potato to be low on sugars so you will have a beautiful golden color vs dark brown.
After extensive research we found the ideal potato breed for our frites. It comes from the geographic region covering Zeelandic Flanders (The Netherlands) and West / East Flanders (Belgium). Because the soil here is rich in clay, it provides perfect conditions for potato cultivation. The potatoes are being shipped to Slovakia through a potato trader that has over 40 years of experience.
